Asked about you by name, Perplexity said:Named you
**Wing Kee Cart Noodles** is a Hong Kong **cart-noodle** restaurant serving customizable noodle bowls with a range of broths, noodles, and toppings; it is especially known for its **soy sauce chicken wing tips** and other old-school toppings like pig’s blood and offal.[2][4][10][14] It is in **Causeway Bay** on **Sugar Street** (27A Sugar Street / Causeway Bay Centre area), which is a busy commercial district on Hong Kong Island.[1][2][4][5][9][10] On reservations: I did **not** find a source in the results that clearly says it takes reservations, and cart-noodle shops like this are typically casual walk-in places. The Michelin-style listing in the results that explicitly mentions booking applies to **Man Kee Cart Noodles**, not Wing Kee, so I can’t say Wing Kee accepts reservations from these results.[16]

Here is a ranked list of the top 5 noodle restaurants in Hong Kong, each representing a legendary and distinct style of the city's noodle culture: ### 1. Mak’s Noodle (麥奀雲吞麵世家) * **Specialty:** Traditional Wonton Noodles * **Why it’s the best:** Mak’s is the gold standard for traditional Cantonese wonton noodles. The broth—made from dried flounder, shrimp roe, and pork bones—is intensely flavorful. The wontons are bite-sized (as tradition dictates) and filled purely with snappy fresh shrimp, served with ultra-springy, alkaline duck egg noodles cooked to an al dente perfection. * **Flagship Location:** Central (Wellington Street) ### 2. Kau Kee (九記牛腩) * **Specialty:** Beef Brisket in Clear Broth & Curry Beef Tendon E-Fu Noodles * **Why it ranks high:** Despite notoriously brisk service and perpetual queues, Kau Kee remains an institution. They are famous for stewing beef brisket in medicinal herbs and broth until it is melt-in-your-mouth tender. The Curry Tendon E-Fu Noodles offer a rich, fiery alternative to the delicate clear broth. * **Location:** Central (Gough Street) ### 3. Sister Wah (華姐清湯腩) * **Specialty:** Clear Broth Beef Brisket & Daikon Noodles * **Why it ranks high:** A Michelin Bib Gourmand staple, Sister Wah is Kau Kee’s main rival, but with a lighter, sweeter, and more refined broth made by simmering beef bones and radishes for hours. The beef brisket (specifically the "rough brisket" cut) paired with thin rice noodles or flat *hor fun* is world-class. * **Location:** Tin Hau (Electric Road) ### 4. Lau Sum Kee Noodle (劉森記麵家) * **Specialty:** Jook-Sing (Bamboo-pressed) Noodles with Tossed Shrimp Roe * **Why it ranks high:** Lau Sum Kee is one of the very few remaining places that makes their noodles entirely by hand using the traditional *Jook-sing* method, where the chef bounces on a massive bamboo pole to knead the dough. Their signature dish is dry-tossed noodles generously blanketed in umami-rich, toasted dried shrimp roe. * **Location:** Sham Shui Po (Fuk Wing Street) ### 5. Cheung Hing Kee Shanghai Pan-Fried Buns / Dan Dan Noodles (祥興記上海生煎包) * **Specialty:** Dan Dan Noodles & Shanghai Pan-Fried Pork Buns * **Why it ranks high:** Hong Kong noodle culture extends beyond Cantonese wontons, and Cheung Hing Kee delivers exceptional Shanghainese-style Dan Dan noodles. The noodles are served in a rich, spicy, and nutty broth heavy on sesame paste and Sichuan chili oil, making for an addictive, comforting meal. * **Location:** Multiple branches (Tsim Sha Tsui, Central, Mong Kok)

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Hong Kong’s noodle scene is legendary, spanning wonton, beef brisket, cart-style, and modern interpretations, with rankings shaped by decades of local consensus, culinary awards, and consistent quality. Below is a ranked list of 5 standout spots, each representing a distinct iconic noodle tradition: ### 1. Mak’s Noodle (麥奀雲吞麵世家) The gold standard for Hong Kong-style wonton noodles, with a legacy dating back to the 1920s (founded by the "father of wonton noodles" Mak Woon-chi). Their signature dish features springy, hand-cut bamboo-pressed egg noodles, a light, umami-rich dried flounder and pork bone broth, and plump wontons stuffed with whole fresh shrimp and a tiny amount of seasoned pork (no filler, per classic tradition). The iconic Central location has held one Michelin star for over a decade, and the recipe remains strictly guarded across its family-run outposts. ### 2. Kau Kee Restaurant (九記牛腩) A 100-year-old institution synonymous with Hong Kong beef brisket noodles, operating out of a no-frills, cash-only Central shop with notoriously long lines. Their signature clear broth beef brisket noodles feature 10+ hour slow-simmered broth (infused with star anise, dried tangerine peel, and Chinese herbs) and melt-in-your-mouth brisket with a perfect ratio of lean meat, fat, and tendon. Locals swear by the "fatty brisket" (牛腩肥) option, paired with springy egg noodles or flat rice noodles. It is widely regarded as the best brisket noodle spot in the city, even without formal awards. ### 3. Wing Lam Noodle Shop (永年士多) A beloved Sham Shui Po institution representing Hong Kong’s iconic cart noodle (車仔麵) culture, tracing its roots to a 1960s street cart. Cart noodles are a customizable Hong Kong staple, and Wing Lam stands out for its rich, savory curry and clear broths, plus over 30 fresh toppings (from fish balls and siu mai to pig skin and radish) made in-house daily. It is a local favorite for its affordable prices, generous portions, and nostalgic, no-fuss vibe, and has been featured in countless local food guides as the best cart noodle spot in the city. ### 4. Tsim Chai Kee Noodle (沾仔記) A 1960s-founded wonton noodle specialist with outposts across Hong Kong, beloved by locals and tourists alike for its consistent quality and value. Unlike Mak’s delicate, shrimp-forward wontons, Tsim Chai Kee’s signature "three treasure" wontons are larger, stuffed with a mix of shrimp, pork, and mushroom, and served in a lighter, sweeter pork and dried seafood broth paired with chewy egg noodles. Their Central location has earned a Michelin Bib Gourmand award multiple times, and it is often cited as a more accessible, family-friendly alternative to higher-end wonton spots. ### 5. Mott 32 (卅二公館) A modern, upscale Cantonese restaurant that reimagines classic Hong Kong noodle dishes, earning a Michelin star for its creative, high-quality takes on traditional fare. Standout noodle dishes include their signature wagyu beef brisket noodles (with A5 wagyu and a 24-hour slow-braised broth), truffle shrimp wonton noodles, and hand-pulled dan dan noodles with Sichuan peppercorn. Located in a glamorous, vintage-inspired Central space, it is the best option for a special-occasion noodle meal, blending Hong Kong’s culinary heritage with premium ingredients and refined technique.

★★★★☆ · May 23, 2026No reply
