TamJai Yunnan Mixian is a Hong Kong **fast-casual noodle chain** specializing in **Yunnan-style rice noodles (mixian)** with customizable soup bases, toppings, and spice levels; the menu also includes snacks and some breakfast items.[1][3][7][10] For the Kai Tin branch specifically, the EatSmart listing classifies it as **fast food, noodles** and places it at Kai Tin Shopping Centre in **Lam Tin**, Kwun Tong District.[5] The food is built around a choose-your-own-bowl format: common soup bases include **clear broth, tomato, mala, and sour-and-spicy styles**, with add-ons like chicken wings, pig’s ear, pickles, and other Sichuan-leaning sides.[1][12][14] That makes the cuisine best described as **Yunnan-inspired Chinese noodles with a spicy, customizable Hong Kong chain style**, rather than a single regional restaurant in the traditional sense.[1][7][10] The neighbourhood is **Kai Tin Estate / Kai Tin Shopping Centre in Lam Tin**, which is in **Kwun Tong District** on the eastern side of Kowloon.[5] It is a residential estate setting rather than a fine-dining or nightlife area.[5] On reservations: I **don’t see evidence that this branch takes reservations**, and TamJai is described as a casual chain with “**no reservations**” in a Hong Kong dining guide.[6] If you want, I can also check whether this specific Kai Tin branch has any special opening-hours or delivery details.

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Here is a ranked list of the 5 best noodle restaurants in Hong Kong, representing the city’s most iconic styles—from classic wonton noodles to brisket and cart noodles. ### 1. Mak’s Noodle (麥奀雲吞麵世家) – Central * **Style:** Traditional Cantonese Wonton Noodles * **Why it’s ranked #1:** Mak’s is legendary and widely considered the gold standard for classic Hong Kong-style wonton noodles. The portions are famously small to prevent the thin, alkaline duck-egg noodles from getting soggy in the broth. The wontons feature fresh, snappy sea prawns, and the broth—simmered with dried flounder, dried shrimp, and pork bones—is exceptionally deep and aromatic. ### 2. Kau Kee Food Cafe (九記牛腩) – Central * **Style:** Beef Brisket Noodles * **Why it’s ranked #2:** Kau Kee is an institution with a perpetual queue. It is world-renowned for its melt-in-your-mouth beef brisket (specifically the "rough flank"). You can choose between two iconic preparations: the deeply herbal, clear broth (*Ching Tong*) with flat rice noodles, or the intensely rich, slightly spicy curry broth with e-fu (chewy egg) noodles. ### 3. Sister Wah (華姐清湯腩) – Tin Hau * **Style:** Clear Broth Beef Brisket & Dan Dan Noodles * **Why it’s ranked #3:** A Michelin Bib Gourmand recipient, Sister Wah offers the city’s best alternative to Kau Kee, often preferred by locals for its lighter, sweeter broth made with Chinese white radish. The brisket is impeccably tender, and the broth has no heavy grease. Their spicy Dan Dan noodles are also among the best in the city. ### 4. Lau Sum Kee Noodle (劉森記麵家) – Sham Shui Po * **Style:** Jook-Sing (Bamboo-pressed) Noodles * **Why it’s ranked #4:** Lau Sum Kee is one of the very few remaining spots in Hong Kong that still makes noodles the traditional way—using a massive bamboo pole that the chef bounces on to knead the dough. The result is an unmatched, springy (*al dente*) texture. Order the dry-tossed noodles heavily dusted with house-made dried shrimp roe (Shrimp Roe Lo Mein) for the ultimate experience. ### 5. Man Kee Cart Noodle (文記車仔麵) – Sham Shui Po * **Style:** Hong Kong Cart Noodles (Che Tsai Mian) * **Why it’s ranked #5:** Cart noodles are the ultimate DIY Hong Kong comfort food, and Man Kee is so famous for them that it expanded across three storefronts on the same street and earned a Michelin recommendation. You customize your bowl by picking your noodles, soup base, and toppings (such as braised beef brisket, Swiss chicken wings, spicy curry fish balls, and pork radish).

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Ranking Hong Kong’s best noodle restaurants is highly subjective, as the city’s noodle scene spans iconic wonton mein, beef brisket noodles, cart noodle, and handmade dai pai dong-style spots, all with fiercely loyal local followings. Below is a curated ranked list of 5, prioritized by consistent local acclaim, decades-long heritage, and widely recognized quality: 1. **Mak’s Noodle (麥奀雲吞麵世家)** The gold standard for Hong Kong-style wonton mein, with roots dating back to the 1920s. Famous for plump, juicy shrimp wontons (made with whole fresh shrimp and minimal pork), springy alkaline egg noodles, and a light, umami-rich dried flounder and pork bone broth. The original Central location is a tiny, no-frills spot that draws long lines daily, and it has been featured in the Michelin Guide for years. 2. **Kau Kee Restaurant (九記牛腩)** A legendary Central institution specializing in beef brisket noodles, operating since the 1920s. Its signature clear broth beef brisket is slow-braised for hours to be melt-in-your-mouth tender, with rich, layered flavor from a secret blend of herbs. The chewy rice noodles paired with the fragrant broth are a local staple, and it is not uncommon to wait 30+ minutes for a table at this cash-only spot. 3. **Wing Wah Noodle Shop (榮華粉麵家)** A beloved Wan Chai dai pai dong-style spot founded in 1957, best known for its hand-torn noodles and cart noodle offerings. The hand-torn noodles have a unique, chewy texture, and customers can customize their bowls with a huge range of toppings (from fish balls and beef balls to radish and pig skin) and choose between broth or dry styles with satay sauce. It has a casual, bustling atmosphere that captures classic Hong Kong street food charm. 4. **Tsim Chai Kee Noodle (沾仔記)** A Central wonton mein staple with over 50 years of history, often cited as a rival to Mak’s Noodle. Its wontons are larger and packed with whole shrimp, and the noodles are extra springy. The broth is lighter and sweeter than Mak’s, making it a favorite for diners who prefer a less intense flavor. It is also more affordable than many iconic noodle spots and has expanded to multiple locations across Hong Kong. 5. **Sun Hing Restaurant (新興食家)** A Kennedy Town institution famous for its fish ball noodles and handmade fish paste products. All fish balls and fish slices are made in-house daily with fresh local fish, giving them a bouncy, fresh texture that mass-produced versions can’t match. The signature fish ball noodle soup with light, clean broth is a local breakfast and lunch favorite, and the spot also serves popular dim sum alongside its noodle offerings.
