I don't have reliable current information about specific sushi restaurants currently operating in Sha Tin. Restaurant locations and operations change frequently, and my knowledge may be outdated. I'd recommend: - Checking Google Maps or OpenRice (a popular Hong Kong restaurant app/website) - Asking your hotel concierge - Searching recent reviews on TripAdvisor This will give you accurate, up-to-date options with current hours and availability.

Asked: “What are the best Sushi restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Hong Kong has one of the world’s most competitive high-end sushi scenes, with many chefs trained in Tokyo’s Edomae tradition, often using daily air-flown premium Japanese seafood. Below is a ranked list of 5 standout spots, ordered by overall reputation for craftsmanship, ingredient quality, and experience: 1. **Sushi Saito (Four Seasons Hotel Hong Kong)** The only 3-Michelin-starred sushi restaurant in Hong Kong, helmed by Tokyo-based sushi master Takashi Saito and his protégé Kei Kojima. It is widely regarded as the gold standard for Edomae sushi outside Tokyo, with ultra-precise rice seasoning, perfectly aged fish, and a 20+ course omakase that changes daily based on the best seasonal catch from Toyosu Market. Reservations are extremely competitive, often booked months in advance. 2. **Sushi Shikon (The Landmark Mandarin Oriental)** A 3-Michelin-starred Edomae sushi spot led by chef Yoshiharu Kakinuma, who trained under Tokyo’s legendary sushi master Kanesaka. It is famous for its meticulous aging of fish (some cuts are cured for days to deepen flavor) and perfectly vinegared rice tailored to each piece of seafood. The intimate 8-seat counter offers a personal, unrushed omakase experience. 3. **Sushi Ono** A 2-Michelin-starred hidden gem in Central, run by chef Masayoshi Ono, a former chef at Tokyo’s 3-Michelin-starred Sushi Kanesaka. It is beloved by local sushi connoisseurs for its unpretentious vibe, exceptional value relative to its peer group, and creative but faithful Edomae preparations. Chef Ono sources rare seasonal ingredients himself, and the small 10-seat counter makes for a warm, personal experience. 4. **Sushi Tokami (1881 Heritage)** A 2-Michelin-starred Edomae sushi restaurant from Tokyo’s famous Sushi Tokami group, helmed by chef Hiroshi Sakamoto. It is known for its signature red vinegar rice (a traditional Edomae style less common in Hong Kong) and bold, balanced flavors. The omakase features a mix of classic and slightly inventive cuts, and the elegant space in the historic 1881 Heritage complex adds to the special occasion feel. 5. **Sushi Mamoru** A 1-Michelin-starred neighborhood favorite in Wan Chai, led by chef Mamoru Takanashi. It is praised for its approachable but high-quality Edomae sushi, with a focus on hyper-seasonal seafood and a friendly, relaxed counter atmosphere. It offers both lunch and dinner omakase at a more accessible price point than the 3-star spots, making it a go-to for regular sushi lovers without sacrificing craftsmanship.
