**Sushi Man** in Hong Kong appears to be a **Japanese omakase / sushi restaurant**, with a strong emphasis on **handmade sushi and sashimi**, plus **uni bowls** and other premium seafood; several sources say much of the ingredient sourcing is from Japan.[2][8][14] The **best-documented branch** is in **Yuen Long**, in the **New Territories**—specifically at **Shop 5 / Shop E, G/F, Lee Fat House, 5 Yan Lok Square, Yuen Long**.[1][2][8][9] Some search results also show branches in **Tsim Sha Tsui** and **Hung Hom / Whampoa**, so the name may refer to more than one location.[3][5][11][15] On **reservations**, the results indicate that at least the **Tsim Sha Tsui** branch says **“call us book a table”**, which suggests reservations are accepted there.[7] I did not find a clear, explicit reservation policy for the **Yuen Long** branch in the results, so I can only say that **reservations are likely available at some branches, but not confirmed for all locations**.[7][1][8]

Hong Kong has one of the world’s most competitive high-end sushi scenes, with many chefs trained in Tokyo’s renowned Edomae tradition, plus excellent mid-tier and innovative spots. Below is a ranked list of 5 standout restaurants, selected for their craftsmanship, ingredient quality, consistency, and guest experience: 1. **Sushi Saito (Four Seasons Hotel Hong Kong)** – The only 3-Michelin-starred sushi restaurant in Hong Kong, and the international outpost of Tokyo’s legendary Sushi Saito. Chef Takashi Saito and his Hong Kong-based head chef source 90% of their fish from Tokyo’s Toyosu Market, and follow strict Edomae techniques (aging, curing, marinating) to highlight each ingredient’s natural flavor. The 20+ course omakase is perfectly paced, and the intimate counter setting offers a front-row view of the chefs’ precision. It is widely considered the gold standard for sushi in the city. 2. **Sushi Ono** – A 2-Michelin-starred hidden gem in Central, run by chef Masayoshi Ono, who trained at Tokyo’s iconic Sushi Kanesaka. Chef Ono is known for his hyper-seasonal menu and his signature aged tuna (shoyu-marinated chutoro and otoro that are aged for 7–10 days to deepen their umami). The 18-seat counter has a warm, unpretentious vibe, and the omakase balances classic Edomae staples with subtle, creative touches that never overpower the fish. It is a favorite among local sushi connoisseurs for its consistency and value relative to other top-tier spots. 3. **Sushi Mori** – A 2-Michelin-starred restaurant in Tsim Sha Tsui, helmed by chef Mori Tomonori, who spent over a decade training in Tokyo’s Ginza district. What sets Sushi Mori apart is its focus on rare, seasonal ingredients (think Hokkaido uni, live botan ebi, and wild yellowtail from Kyushu) and chef Mori’s meticulous attention to rice temperature and vinegar balance, which is tailored to each piece of fish. The omakase includes a mix of nigiri, small appetizers, and a handroll course, and the sleek, minimalist space feels like a little slice of Tokyo in Kowloon. 4. **Sushi Mamoru** – A 1-Michelin-starred neighborhood favorite in Wan Chai, run by chef Mamoru Kataoka, who previously worked at Sushi Saito Tokyo. It offers a more approachable, relaxed take on Edomae sushi, with a shorter omakase (around 15 courses) and a la carte options that make it a great pick for both casual meals and special occasions. Chef Kataoka is known for his friendly, conversational style, and his standout dishes include the melt-in-your-mouth anago (sea eel) and the spicy tuna handroll made with fresh, hand-chopped otoro. 5. **Sushi Zo** – A popular, innovative sushi spot with locations in Central and Causeway Bay, known for its modern take on Edomae and its generous, value-for-money omakase. Chef Keita Sato sources fish from both Japan and local Hong Kong waters, and incorporates creative touches like yuzu-kosho marinated scallops and truffle-infused uni nigiri that feel fresh rather than gimmicky. The casual, lively counter atmosphere makes it a great option for groups or diners who want a high-quality sushi experience without the formal vibe of a 3-Michelin-starred restaurant. Note: All top-tier sushi spots in Hong Kong require reservations (often weeks in advance for weekend slots), and most offer omakase-only service for dinner.

I celebrated my birthday here with my girlfriend. We were fortunate to have had Larry, the Head Chef, cooking our food. Soothing ambience, attentive service, and great-tasting food.
Favourite omakase sushi in HK so far. Sushi chef and staff are very friendly and sushi taste fresh and high quality. Lunch menu is also very reasonably priced.
Not recommended. The restaurant was still officially open, but we were informed that the kitchen had already closed 1.5 hours before the stated closing time. There was no clear information about this at the entrance or online, which is misleading for customers and a waste of time
