Sing Lum Khui Sour & Spicy Rice Noodle Restaurant is a **Yunnan-style rice noodle** shop, best known for **sour-and-spicy noodle soup** with customizable toppings and heat/sourness levels.[1][11][13] It is in **Tsim Sha Tsui**, a central neighborhood in Kowloon, Hong Kong, with locations reported on **Lock Road** and **Cameron Road** in that area.[1][5][6][14] As for **reservations**, I could not find a reliable source in the results that clearly says it **takes reservations**. The listings I found focus on address, cuisine, and reviews, but not booking policy.[5][6][11] If you want, I can also help you distinguish which Tsim Sha Tsui branch is the current one.

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Hong Kong is one of the world’s great noodle capitals, famous particularly for Cantonese wonton noodles, beef brisket noodles, and cart noodles. Here is a ranked list of the top 5 noodle restaurants in Hong Kong, taking into account culinary heritage, noodle texture (*jook-sing* springiness), and local reputation: ### 1. Mak’s Noodle (麥奀雲吞麵世家) – Central * **The Specialty:** Traditional Cantonese Wonton Noodles * **Why it’s ranked #1:** Mak’s is legendary. The family traces its lineage back to Mak Wun-chi, the "Wonton King" of 1920s Guangzhou. Served in intentionally small bowls so the noodles don't become soggy, the thin egg noodles have an unmatched al dente "snap." The wontons are pure, fresh prawn (no pork filler), and the broth—made from dried flounder, shrimp roe, and pork bones—is pure umami. ### 2. Sister Wah (華姐清湯腩) – Tin Hau * **The Specialty:** Clear Broth Beef Brisket Noodles * **Why it’s ranked #2:** While Kau Kee is also famous for brisket, Sister Wah takes the edge for its consistency and welcoming service. This Michelin Bib Gourmand spot serves beef brisket that is simmered for hours until meltingly tender. The broth is crystal clear yet deeply savory, sweetened with daikon radish that absorbs all the rich beef flavor. ### 3. Kwan Kee Bamboo Noodle (坤記竹昇麵) – Cheung Sha Wan * **The Specialty:** Traditional *Jook-Sing* (Bamboo-Pressed) Noodles * **Why it’s ranked #3:** Kwan Kee is one of the very few remaining shops in Hong Kong that still makes noodles the ancient way: the noodle master rides a massive bamboo pole, bouncing his body weight to knead the dough. The result is an egg noodle with an intensely springy texture you cannot achieve with machines. Order the dry tossed noodles with a generous dusting of roasted shrimp roe. ### 4. Kau Kee (九記牛腩) – Sheung Wan * **The Specialty:** Curry Beef Tendon and Brisket Noodles * **Why it’s ranked #4:** An absolute institution with legendary queues and brusque service, Kau Kee remains essential. While their clear broth is great, their signature is the rich, thick, slightly spicy curry broth served with flat *e-fu* noodles and fall-apart tender beef tendon. It is bold, heavy, and deeply satisfying. ### 5. Man Kee Cart Noodle (文記車仔麵) – Sham Shui Po * **The Specialty:** Hong Kong Cart Noodles (*Che Tsai Mian*) * **Why it’s ranked #5:** Cart noodles are Hong Kong’s ultimate working-class comfort food, allowing you to build your own bowl. Man Kee is so popular that it occupies several storefronts on the same street and holds a Michelin Bib Gourmand recommendation. Choose your noodle type, broth, and toppings like braised beef brisket, swiss sauce chicken wings, pig blood curd, and curry fish balls.

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Hong Kong’s noodle scene is fiercely competitive, spanning wonton, beef brisket, cart noodle, and zha jiang mian styles, with many decades-old institutions alongside beloved modern spots. Below is a ranked list of 5 standout restaurants, prioritized by consistent quality, local reputation, culinary heritage, and unique signature dishes: 1. **Mak’s Noodle (麥奀記雲吞麵)** The gold standard for Hong Kong-style wonton noodles, with a legacy dating back to the 1920s (its founder is widely credited with perfecting the modern wonton noodle recipe). The signature dish is plump, juicy wontons stuffed with whole shrimp and lean pork, served in a light, umami-rich broth simmered for hours with dried flounder, pork bones, and ham, paired with springy, hand-pulled egg noodles. The Central location is the original and most iconic, with a no-frills, retro vibe that has drawn locals and travelers alike for generations. 2. **Kau Kee Restaurant (九記牛腩)** A legendary Central institution specializing in beef brisket noodles, operating since the 1930s. Its clear broth brisket is the star: tender, melt-in-your-mouth brisket slow-cooked for 10+ hours with a secret blend of herbs and spices, served in a light, deeply savory broth with chewy rice or egg noodles. The curry brisket variant is also a fan favorite, with a rich, aromatic curry that balances spice and sweetness. Expect long lines, but the portion sizes and depth of flavor make it well worth the wait. 3. **Wing Wah Noodle Shop (榮華粉麵家)** A beloved 70-year-old Sham Shui Po spot famous for its cart noodle (cha chaan teng-style customizable noodles) and signature zha jiang mian. Its zha jiang mian stands out for its thick, sweet-savory fermented soybean paste mixed with minced pork, served with crisp cucumber strips and springy hand-rolled noodles. For cart noodle fans, there are over 30 toppings to choose from (including fish balls, beef offal, and radish) with a deeply flavorful base broth that tastes like old-school Hong Kong street food. 4. **Tasty Congee & Noodle Wantun Shop (正斗粥麵專家)** A modern classic with multiple locations across Hong Kong, known for its elevated take on traditional wonton and beef noodles without sacrificing authentic flavor. Its signature gold leaf wonton noodles are a playful twist: plump shrimp wontons topped with edible gold leaf, served in a clear, refined broth with springy noodles. The beef tendon noodles are also a standout, with ultra-tender tendon braised in soy sauce that falls apart at the touch. It’s a great pick for those who want traditional flavors in a cleaner, more comfortable setting. 5. **Sun Hing Restaurant (新興食家)** A 60-year-old Kennedy Town institution beloved by locals for its cheap, generous portions and iconic fish ball noodles. Its house-made fish balls are bouncy, fresh, and packed with pure fish flavor, served in a light, sweet broth with rice noodles or egg noodles. The curry fish ball noodle variant is a local favorite, with a bold, creamy curry that pairs perfectly with the chewy fish balls. It’s a no-frills, cash-only spot that captures the unpretentious, comfort-food spirit of Hong Kong’s neighborhood noodle shops.
