Marugame Seimen in Hong Kong is a **Japanese udon** chain, especially known for **Sanuki-style udon** and self-service/customizable bowls, with tempura and other side dishes commonly listed alongside the noodles.[1][18][19] In terms of neighbourhood, the branch most clearly identified in the results is in **Tsim Sha Tsui** at iSQUARE on Nathan Road, which is a busy shopping and dining area in Kowloon; other Hong Kong branches also appear in **Causeway Bay, Tsuen Wan, Tuen Mun, Kwun Tong, Sha Tin, Yau Tong, and Whampoa**.[2][15][16] I did **not** find evidence in the results that it takes reservations; the listings shown emphasize addresses, hours, telephone numbers, delivery/takeout, and walk-in style service, but none of the sources I saw mention reservations.[2][6][10][15]

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Here is a ranked list of the top 5 noodle restaurants in Hong Kong, representing the city’s most iconic styles—from classic wonton noodles to beef brisket and cart noodles. ### 1. Mak’s Noodle (麥奀雲吞麵世家) – Central * **The Specialty:** Traditional Cantonese Wonton Noodles * **Why it’s ranked #1:** Mak’s is legendary in Hong Kong, with roots tracing back to Guangzhou in the 1920s. They are famous for their springy, alkaline duck-egg noodles served in a rich dried-flounder broth. The wontons are small, delicate, and filled purely with fresh shrimp rather than pork filler, hidden under the noodles to keep them from getting soggy. * *Location: 77 Wellington Street, Central (original branch)* ### 2. Sister Wah (華姐清湯腩) – Tin Hau * **The Specialty:** Clear Broth Beef Brisket Noodles * **Why it’s ranked #2:** A long-time Michelin Bib Gourmand recipient, Sister Wah is renowned for its light, deeply aromatic broth simmered with Chinese herbs and beef bones, rather than the heavy curry or five-spice versions found elsewhere. The beef brisket is melt-in-your-mouth tender, paired perfectly with flat rice noodles (*hor fun*) and sweet, broth-soaked daikon radish. * *Location: 13A Electric Road, Tin Hau* ### 3. Lau Sum Kee Noodle (劉森記麵家) – Sham Shui Po * **The Specialty:** Jook-sing (Bamboo Pole) Noodles with Dried Shrimp Roe * **Why it’s ranked #3:** Lau Sum Kee is one of the very few remaining spots in Hong Kong that still makes noodles entirely by hand using a traditional heavy bamboo pole to knead the dough. The standout dish is the "tossed" (dry) noodles generously coated with umami-rich dried shrimp roe (*har ji meen*), served with a side of wonton broth. * *Location: 48 Kweilin Street, Sham Shui Po* ### 4. Kau Kee (九記牛腩) – Central * **The Specialty:** Curry Beef Tendon and Brisket Noodles * **Why it’s ranked #4:** Despite notoriously brisk service and long queues, Kau Kee remains an essential Hong Kong pilgrimage. Their signature dish is beef brisket and tendon served in a thick, intensely spiced, and slightly sweet curry broth, paired with flat *e-fu* noodles that soak up the sauce. * *Location: 21 Gough Street, Central* ### 5. Man Kee Cart Noodles (文記車仔麵) – Sham Shui Po * **The Specialty:** Traditional Cart Noodles (*Che Tsai Meen*) * **Why it’s ranked #5:** Cart noodles are the ultimate Hong Kong comfort food, allowing diners to customize their bowl from dozens of toppings, noodles, and broths. Another Michelin Bib Gourmand favorite, Man Kee elevated this humble street food with premium toppings like Swiss sauce chicken wings, braised beef brisket, spicy squid, and pork blood curd. * *Location: 121 Fuk Wing Street, Sham Shui Po*

I appreciate the question, but I should be honest: my information about current restaurants in Tseung Kwan O may be outdated. Restaurants frequently change, close, or relocate. For the most reliable recommendations tonight, I'd suggest: - Google Maps (filter by "Noodles" + open now) - OpenRice (Hong Kong's main food review site) - Asking locals or your hotel staff This will give you accurate, up-to-date options that are actually open.

Asked: “What are the best Noodle restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Hong Kong’s noodle scene is legendary, spanning wonton, beef brisket, cart noodle, and shrimp roe varieties, with decades-old institutions and modern icons leading the pack. Below is a ranked list of 5 standout spots, selected for consistent quality, iconic status, local popularity, and critical acclaim: 1. **Mak’s Noodle (麥奀雲吞麵世家)** The gold standard for Hong Kong-style wonton noodles, with a history dating back to the 1960s. Its signature dish features springy egg noodles tossed in a light, umami-rich dried flounder and pork bone broth, topped with plump whole-shrimp wontons wrapped in thin, silky skins. The original Central location is a tiny, no-frills space with long lines, but the recipe (passed down through generations) remains unchanged. It’s a must-visit for anyone seeking the classic wonton noodle experience. 2. **Kau Kee Restaurant (九記牛腩)** A 90-year-old institution famous for its beef brisket noodles, located in Central. The brisket is slow-braised for hours in a spiced, aromatic broth until it’s melt-in-your-mouth tender, with the perfect balance of lean meat and fat. The clear broth version is the most iconic, though the curry brisket option is also beloved. The restaurant has a famously no-nonsense service style, but the quality of the brisket makes it well worth the wait. 3. **Man Mo Cafe (文武廟粉麵茶餐廳)** A hidden gem in Sheung Wan, renowned for its cart noodles and traditional shrimp roe noodles. The shrimp roe noodles are tossed with rich, briny shrimp roe, resulting in a deeply savory, slightly salty flavor that pairs perfectly with the springy egg noodles. For a more customizable option, the cart noodle set lets you pick from over 20 toppings (including fish balls, beef offal, and Chinese broccoli) and broths, all made fresh daily. It’s a favorite among locals for its affordable prices and nostalgic vibe. 4. **Tsim Chai Kee Noodle (沾仔記)** A Michelin-recommended wonton noodle spot with multiple locations across Hong Kong (including Central and Mong Kok). Unlike Mak’s smaller wontons, Tsim Chai Kee is known for its oversized, juicy wontons packed with whole shrimp and minced pork, served in a light, clean broth. The noodles are extra springy, and the restaurant also offers excellent fish ball and beef ball noodles. It’s a great option for those who prefer heartier portions and a more casual, accessible setting. 5. **Sun Hing Restaurant (新興食家)** A 60-year-old institution in Kennedy Town, famous for its fish noodles and fish ball noodles. The fish noodles are made fresh daily from pureed fresh fish (no added starch), resulting in a soft, silky texture and a delicate, sweet fish flavor. The fish balls are equally fresh, bouncy, and full of flavor. The restaurant also serves excellent congee and dim sum, but the fish noodles are the star attraction. It’s a local favorite for breakfast and lunch, with a warm, old-school Hong Kong diner atmosphere.
