Asked about you by name, Perplexity said:Named you
**Machida Shoten (Airside)** is a **Japanese ramen restaurant** in **Kai Tak, Kowloon**, inside the AIRSIDE mall.[1][2][7] It specializes in **Yokohama-style Iekei ramen**—a rich broth made with pork bone/marrow and soy sauce, served with thick, chewy noodles.[1][3][6][8] The restaurant is in the **AIRSIDE** neighbourhood/mall area at **2 Concorde Road, Kai Tak**, which is a newer mixed-use district in eastern Kowloon.[2][7][8] Sources describe AIRSIDE as being surrounded by residential and office buildings, which fits Kai Tak’s recent redevelopment into a busy urban area.[7] For reservations, I **could not find a source confirming that Machida Shoten (Airside) takes reservations**.[1][2][7][13] The sources I found list address, hours, and contact details, but not a reservation policy.[1][2][13]

Asked: “What are the best Ramen restaurants in Hong Kong? Give me a ranked list of 5 with the restaurant names.”
Here is a ranked list of the top 5 ramen restaurants in Hong Kong, based on broth quality, authenticity, and overall popularity among ramen enthusiasts: ### 1. **Ramen Kureha (くれは)** * **Location:** Causeway Bay * **Specialty:** Thick Tonkotsu (Pork Bone) Ramen * **Why it's #1:** Arguably the most authentic and consistently high-quality ramen shop in the city. Helmed by a master from Tokyo, the shop is famous for its ultra-rich, collagen-heavy tonkotsu broth boiled for over 20 hours. You can even choose between thin Hakata-style noodles or thick, curly Tokyo-style noodles. ### 2. **Maru De Sankaku (○de▽)** * **Location:** Central * **Specialty:** Sea Bream (Tai) Broth Ramen * **Why it's #2:** Created by the team behind Osaka's Michelin-starred Mensho Matsunetsuki, this hidden gem eschews traditional pork for high-grade sea bream. The broth is remarkably clean, aromatic, and deeply flavorful. Order the "Dashi Ramen" for a clear broth or the "Nokou" for a creamy, foamy fish-based ramen. ### 3. **Zagin Soba (座銀)** * **Location:** Central & Happy Valley * **Specialty:** Tori Paitan (Creamy Chicken Broth) * **Why it's #3:** An import from Osaka, Zagin Soba is famous for its cappuccino-like, foamy chicken broth, which is whipped to velvety perfection before serving. It is served with both pork and tender sous-vide chicken chashu, and famously topped with a nest of crispy, fried burdock root (gobo). ### 4. **Torihana Tei Ramen (鳥花亭)** * **Location:** Wan Chai * **Specialty:** Assari (Light) & Paitan (Rich) Chicken Ramen * **Why it's #4:** If you prefer pure chicken broths over heavy pork tonkotsu, this is a local favorite. They excel at both light, clear chicken ramen (Shio or Shoyu) and a decadent, thick chicken broth. The noodles are cooked with an ideal bite, and their chicken chashu is exceptionally tender. ### 5. **Nojo Ramen Izakaya** * **Location:** Central (H Queen's) * **Specialty:** Slow-cooked Chicken Leg Ramen (Tori Soy Sauce / Paitan) * **Why it's #5:** Beyond the vibrant izakaya atmosphere, Nojo delivers some of the most satisfying ramen in the city. Their signature bowl features a massive, fall-off-the-bone whole braised chicken leg resting in a thick, savory chicken-and-dashi broth.
