Ho To Tai Noodle Shop is a **traditional Hong Kong noodle shop** in **Yuen Long**, in the **New Territories** of Hong Kong.[2][3][7] Its cuisine is **Chinese/Cantonese/Hong Kong-style**, with a focus on **wonton noodles**, **beef brisket noodle soup**, **zhajiang noodles**, and other handmade noodle dishes and dumplings.[1][2][3] The restaurant is described as a long-running local institution, with sources placing its origins in **1946** and emphasizing its old-school, handmade approach.[2][7] The address is on or near **Fau Tsoi Street / Yuen Long On Ning Road** in Yuen Long.[1][2][7] On reservations: I found one listing that says **“Phone Reservation”** on OpenRice, but I did not find a clear, authoritative source confirming whether reservations are generally required or routinely accepted.[4] So the safest answer is: **it may take phone reservations, but I can’t confirm its current reservation policy with confidence**.[4]

Hong Kong is one of the world's great noodle capitals, famous for everything from springy wonton noodles to fiery cart noodles. Here is a ranked list of the 5 best noodle restaurants in Hong Kong, taking into account culinary heritage, consistency, and iconic status: ### 1. Mak’s Noodle (麥奀雲吞麵世家) * **The Specialty:** Traditional Wonton Noodles * **Why it’s ranked #1:** Mak’s is arguably the most famous wonton noodle lineage in Hong Kong, tracing its roots back to Guangzhou in the 1920s. Their noodles are famously *al dente*—made using the traditional "duck egg and alkaline water" method and kneaded with a heavy bamboo pole (*jook-sing*). The broth is intensely savory, brewed from dried flounder, shrimp roe, and pork bones. * **Note:** The portions are intentionally small to prevent the thin noodles from getting soggy in the hot broth. Order a side of beef brisket or Kai-lan (Chinese broccoli) with oyster sauce to make it a full meal. ### 2. Sister Wah (華姐清湯腩) * **The Specialty:** Clear Broth Beef Brisket Noodles * **Why it’s #2:** While nearby Kau Kee is famous for its curry brisket, Sister Wah in Tin Hau takes the crown for noodle purists. Their beef brisket is simmered for hours until it melts in your mouth, served in a remarkably clean, sweet, and aromatic broth infused with daikon radish and Chinese herbs. Paired with flat rice noodles (*hor fun*), it is comforting perfection. ### 3. Tsim Chai Kee (沾仔記) * **The Specialty:** Modern, Jumbo Wonton & Fresh Dace Fish Ball Noodles * **Why it’s #3:** Located directly across the street from Mak’s on Wellington Street, Tsim Chai Kee is its chief rival, offering a very different take on the classic. Instead of bite-sized, traditional wontons, Tsim Chai Kee serves massive, ping-pong-ball-sized wontons stuffed to the brim with whole, crunchy shrimp. Their broth is darker and sweeter, and their handmade dace fish balls are enormous and springy. It’s an unbeatable value for money. ### 4. Kau Kee Food Cafe (九記牛腩) * **The Specialty:** Curry Beef Tendon and Brisket E-fu Noodles * **Why it’s #4:** Kau Kee is a legendary, no-nonsense Central institution. While the lines are long and the service is brisk, their rich, deeply spiced curry beef tendon served over flat, porous E-fu noodles (*yi mein*) is unmatched. The noodles soak up the thick, gelatinous sauce, creating an explosion of flavor and texture with every bite. ### 5. Man Kee Cart Noodles (文記車仔麵) * **The Specialty:** Hong Kong-style Cart Noodles (*Che Tsai Mian*) * **Why it’s #5:** To truly understand Hong Kong noodle culture, you have to eat cart noodles—a customizable street-food staple. Located in Sham Shui Po, Man Kee was awarded a Michelin Bib Gourmand for elevating this humble dish. You choose your noodles (egg, rice, udon, or instant), your broth (spicy, beef brisket, or clear), and your toppings from dozens of options, including braised beef brisket, pork neck, curry fish balls, and stewed pig intestines.
