Butao in **Nam Cheong** is a **Japanese ramen** spot, specifically known for **Hakata-style tonkotsu** ramen with rich pork-bone broth. The V Walk branch is listed at **Shop L2-21, 2/F, V Walk, 28 Sham Mong Road**, which is by **Nam Cheong Station** in **Sham Shui Po, Kowloon**.[2][4] The cuisine is best described as **Japanese ramen**, with a focus on **tonkotsu** broth and the chain’s signature ramen styles like Butao King, Black King, Red King, and Green King.[2][3][5][13] On **reservations**, I couldn’t find a clear listing confirming that the Nam Cheong branch takes them. The available sources describe the location, cuisine, and hours, but do **not explicitly state a reservation policy** for this branch.[1][2][4] If you want, I can also tell you the branch’s hours or what the signature bowls taste like.

I appreciate the question, but I don't have reliable current information about which specific ramen restaurants are open in Sham Shui Po tonight. Restaurant details change frequently—locations close, reopen, or shift. For accurate, up-to-date recommendations, I'd suggest: - Google Maps (search "ramen Sham Shui Po" + check reviews/hours) - OpenRice (Hong Kong's main food app) - Asking locals or your hotel staff This will ensure you get places that are actually open and still operating.

Ramen culture in Hong Kong is extremely competitive, blending authentic Japanese techniques with local creative twists, and rankings can shift as new spots gain traction—below is a widely agreed-upon ranked list of 5 standout spots, vetted by local food critics and regular diners as of 2024: 1. **Butao Ramen** A longstanding local institution and consistent top pick, famous for its ultra-rich, slow-simmered tonkotsu broth (brewed for over 20 hours with pork bones, chicken, and a secret blend of aromatics) and springy house-made noodles. Diners can customize richness, noodle firmness, and toppings; their signature black garlic tonkotsu and spicy "Red King" ramen are cult favorites. 2. **Ichiran Ramen (Tsim Sha Tsui / Causeway Bay)** The iconic Japanese import’s Hong Kong locations match the quality of its Tokyo flagship, with the signature solo booth dining experience, customizable tonkotsu broth, and thin, chewy straight noodles. Its consistency, precise flavor tuning, and authentic Fukuoka-style recipe make it a reliable go-to for classic tonkotsu fans. 3. **Kikanbo** A cult favorite for bold, spicy miso ramen, this Tokyo import specializes in rich, umami-heavy broths infused with Sichuan peppercorns and fermented chili for a slow-building, numbing heat that balances perfectly with deep pork and chicken umami. Their signature "devil’s tongue" spicy miso ramen with ground pork and bamboo shoots is a must-try for anyone who prefers non-tonkotsu, flavor-forward bowls. 4. **Tsuta Ramen (Central)** The world’s first Michelin-starred ramen shop’s Hong Kong outpost stays true to its Tokyo roots, serving delicate, complex shoyu and shio broths brewed with dashi, clams, and chicken for a lighter, more layered flavor profile than heavy tonkotsu. Their truffle shoyu ramen, topped with house-made chashu and black truffle oil, is a signature for diners seeking refined, umami-forward bowls. 5. **Mashi No Mashi** A local creative favorite known for its innovative, over-the-top ramen creations, most famously the wagyu beef bone broth ramen and truffle cheese tonkotsu. It leans into indulgent, Instagram-worthy bowls without sacrificing depth of flavor, and its casual, lively vibe makes it a popular pick for groups.
